 Spicy Flathead Fillets & Salad
Ingredients
4 small flathead fillets
1 tsp curry powder (mild optional)
1 tsp finely ground ginger
1 tsp cajun spices
1 tsp ground cumin
2 heaped tsp coarsely chopped coriander
1 tbsp plain flour
Method
Mix all ingredients together in a bowl. Roll flathead fillets in the mixture until well coated. Place fillets in a freezer bag and leave in the fridge for two hours. Lightly oil a non-stick fry pan and gently place in the pan. Fry for a few minutes on each side until cooked through. Serve on a garden salad and garnish with lemon wedges.
Serves 2.
